Family Sunday lunch is not the same without a nice plate of passatelli on the table. To the delight of adults and children, here is the ancient recipe of the grandmother. We offer it as we do it in the Hotel. For a successful dish, use only plain bread, please!
15 min + 2 hours for the broth
Ingredients for meat broth:
Put in a pot 3 lt. of cold water, a stick of celery, a carrot, half an onion, half a hen, 300 gr. of beef and boil for 2 and a half hours. When it is cooked, pass the broth to the strainer to filter it.
Meanwhile, waiting for the cooking of the broth, prepare the mixture of passatelli by combining the ingredients (bread, parmesan, lemon peel, nutmeg) and mixing with the 2 eggs, until you get a homogeneous mixture, firm and well compact.
Take the iron and press hard to release the passatelli. Repeat the operation until the dough is used up.
Throw the passatelli directly into the boiling broth and wait for them to come to the surface.
