Green Lasagna
One of the most famous dishes of our tradition. There is also a version with white pastry, without spinach. Your children will love it! First look at the recipes for making puff pastry, meat sauce and bechamel with your hands. If you don’t have the time, there are many ready-made products (the result is not exactly the same, but for many mothers, having the time to cook is a real luxury!). Or come to the Hotel, put your legs under the table and let yourself be enchanted by the scent of a properly made lasagna!

Ingredients for the dough:
- 400 gr. Flour
- 3 eggs
- 1 handful of boiled and chopped spinach (100gr)
For the seasoning:
- 500 gr. Ragù (see recipe)
- 1 liter of béchamel (see recipe)
- 100gr. Parmigiano reggiano
Preparation:
Boil a pot of water with salt. Prepare the dough with flour, eggs and spinach. Pull the medium-thick dough and cut it into 10x 15 rectangles. Blanch 2-3 rectangles at a time for about 1 minute, drain and dry on a cloth. Grease and sprinkle with parmesan cheese a baking pan with high edges, put the rectangles of puff pastry, the béchamel, the ragù and the Parmesan to form at least 5 layers. Fire up and wait for a nice crust to form.
