Boil a pot of water with salt. Prepare the dough with flour, eggs and spinach. Pull the medium-thick dough and cut it into 10x 15 rectangles. Blanch 2-3 rectangles at a time for about 1 minute, drain and dry on a cloth. Grease and sprinkle with parmesan cheese a baking pan with high edges, put the rectangles of puff pastry, the béchamel, the ragù and the Parmesan to form at least 5 layers.
