Spaghetti with Clams is one of the easiest fish dishes to make, not only in hotels but also in your home. For an optimal result, always try to use fresh clams, drain them very well in water and leave the shells! Otherwise in cooking they will become very small. Our Family Hotel proposes them in white or with the fresh diced tomato. Children like  them! It is fast for when you have little time, refined for a romantic dinner!

Doses for:

  • 350 gr di Spaghetti
  • 1 kg di Vongole
  • uno spicchio d’aglio
  • prezzemolo, 1 mazzetto
  • sale e pepe q.b.
  • olio extravergine q.b.


First, start by cleaning the clams, discarding the broken ones. Put the clams in a colander and rinse with cold water. Fill a bowl with water, add plenty of coarse salt and soak the colander with the clams. Soak the clams for 2-3 hours and repeat the operation until you see more sand in the water.

Put the water on the spaghetti and chop the parsley.

In a saucepan, heat a little oil, add the garlic clove, drain the clams well and throw them in the hot pan. Close with the lid and cook for a few minutes over high heat. You can add fresh diced tomatoes to the dressing with clams.

Meanwhile cook the spaghetti in boiling water, draining them halfway through cooking.

Shake the pan of clams from time to time until they are completely open. As soon as they are all open, turn off the heat, collect the clams in a bowl and toss the spaghetti in the clam juice with a little cooking water. Finish cooking the pasta, sprinkle some pepper, add the clams and the chopped parsley.
